Hai's Chicken Rice

Serves 5 Persons


All You Need
1 box of Hai’s Singapore Chicken Rice Sauce Kit
Includes: 1 sachet of chicken rice paste, 1 sachet of chicken meat sauce, 1 sachet of chicken garlic chilli, 1 sachet of dark soy sauce
400g Thai fragrant rice
1 chicken of approx. 1.2-1.5kg (washed & clean)
1 tomato (sliced)
1 cucumber (sliced)
a few sprigs of coriander


Some Simple Steps

  1. Bring 3 litres of water to boil
  2. Place chicken in the water and cook for 25 minutes
  3. Turn off the heat and let simmer for 15 minutes before taking out the chicken
  4. Soak the chicken into ice water for another 15 minutes before setting it aside
  5. Set aside the chicken stock for later use
  6. Wash and drain the rice
  7. Place in rice cooker and add 500ml of chicken stock and 1 sachet of Hai’s chicken rice paste
  8. Cook for 5-6 minutes and mix the paste well with the rice
  9. Continue to cook the rice until it is done.


How To Serve
Cut the chicken into bite-sized pieces, pour the chicken meat sauce over the chicken and sprinkle some coriander on top. Serve chicken garlic chilli and dark soy sauce as dipping sauces. Add cucumber and tomato slices on the side, and a bowl of fragrant chicken rice for an authentic chicken rice experience. You may also add tofu, lettuce, and salt (to taste) to the remaining chicken stock and serve the soup with rice

Chicken Rice Paste

Garlic, vegetable oil (palm oil), pandan leaf, chicken seasoning, lemongrasss, chilli, soy sauce (soybean, flour, water, salt), sesame oil, vinegar, monosodium glutamate

Chicken Meat Sauce
Water, sugar, soya protein, salt, monosodium glutamate, fish gravy, soy sauce, caramel, oyster juice, lactic acid

Chicken Garlic Chili
Water, chilli, garlic, sugar, lime juice, ginger, salt, monosodium glutamate, acetic acid, lactic acid

Dark Soy Sauce
Glucose, soy sauce (soybean, flour, water, salt), caramel, salt, monosodium glutamate
